Ingredients:

  • 4 medium potatoes (hollowed out)
  • 8 slices of bacon
  • 1 cup shredded cheddar cheese
  • 1/2 cup cream cheese, softened

  • 1/4 cup cooked and crumbled bacon (optional)

Instructions:

  3. Wrap two slices of bacon around each hollowed-out potato, securing the ends with toothpicks if needed. Place them on a baking sheet.
  4. In a mixing bowl, combine the shredded cheddar cheese, cream cheese, sour cream, green onions, crumbled bacon (if using), salt, and pepper. Mix until well combined.
  5. Stuff each potato with the cheese mixture, packing it firmly to fill the space.
  6. Bake in the preheated oven for 40-45 minutes, or until the bacon is crispy and the potatoes are tender.
  7. Remove from the oven and garnish with fresh parsley before serving.
