Ingredients:
– 500g Ground beef
– 1 Onion, diced
– 2 Cloves garlic, minced
– 1 Packet taco seasoning
– 1 Cup salsa
– 1 Cup sour cream
– 1 Cup shredded Mexican cheese blend
– 1 Can black beans, drained and rinsed
– 1 Can diced green chilies
– 12-15 Frozen taquitos
– Optional toppings: sliced green onions, diced tomatoes, sliced olives, avocado slices, cilantro
Instructions:
1. Preheat your oven to 190°C. Grease a 23 x 33-cm baking dish with cooking spray.
2. In a large skillet, cook the ground beef over medium heat until browned. Add diced onion and minced garlic, cooking until onion is softened.
3. Stir in taco seasoning, salsa, sour cream, black beans, and green chilies. Cook for an additional 2-3 minutes, until heated through.
4. Spread a thin layer of the beef mixture in the bottom of the prepared baking dish.
5. Arrange the frozen taquitos in a single layer over the beef mixture.
6. Spoon the remaining beef mixture evenly over the taquitos.
7. Sprinkle shredded cheese over the top of the casserole.
8. Cover the dish with aluminum foil and bake in the preheated oven for 25-30 minutes, or until heated through and cheese is melted and bubbly.
9. Remove foil and bake for an additional 5-10 minutes, until cheese is golden brown.
10. Serve hot, garnished with your favorite toppings if desired.
