Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (Panko or regular)
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions:

  1. Prepare the Chicken:
  • Place the chicken breasts between two pieces of plastic wrap or parchment paper.
  • Using a meat mallet or rolling pin, pound the chicken to an even thickness, about 1/2 inch thick.

  • In a shallow dish, place the flour and season with salt and pepper.
  • In another shallow dish, beat the eggs.
  • In a third shallow dish, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.

  • Dredge each chicken breast in the flour, shaking off any excess.
  • Dip the floured chicken into the beaten eggs, ensuring it is fully coated.
  • Finally, press the chicken into the breadcrumb mixture, coating both sides well. Gently press the breadcrumbs onto the chicken to ensure they stick.
  1. Fry the Chicken:
  • In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat.
  • Once the oil is hot, add the breaded chicken breasts. Do not overcrowd the pan; cook in batches if necessary.
  • Fry the chicken for 3-4 minutes per side, or until golden brown and cooked through. The internal temperature should reach 74°C.

  • Transfer the cooked schnitzels to a paper towel-lined plate to drain excess oil.
