Ingredients

  • 500g chicken thighs or breasts, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped

  • 2 tomatoes, pureed
  • 1/2 cup coconut milk
  • 1/2 cup plain yogurt
  • 2 teaspoons curry powder
  • 1 teaspoon turmeric powder

  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder (adjust to taste)

Instructions

  1. Prepare the Base: Heat the oil in a large pan over medium heat. Add the chopped onions and sauté until golden brown.
  2. Add Aromatics: Stir in the garlic and ginger, cooking for 2-3 minutes until fragrant.
  3. Spice It Up: Add the curry powder, turmeric, cumin, coriander, and red chili powder. Stir well and cook for 1-2 minutes to release the flavors.

  5. Cook the Chicken: Add the chicken pieces to the pan and coat them evenly with the spice mixture. Cook for about 5 minutes until the chicken is no longer pink on the outside.
  6. Creamy Goodness: Stir in the yogurt and coconut milk, mixing everything thoroughly. Reduce the heat to low, cover the pan, and let it simmer for 25-30 minutes, until the chicken is fully cooked and tender.
  7. Final Touch: Stir in the garam masala and adjust salt as needed. Let it simmer for another 5 minutes.
