Ingredients

  • 1 kg (about 6 medium) potatoes, peeled and diced
  • 3 large eggs
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup celery, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup dill pickles, chopped (optional)
  • 2 tablespoons fresh parsley, chopped (optional)
  • Paprika, for garnish

Instructions

  1. Cook the Potatoes: Place the diced potatoes in a large pot and cover them with water. Add a pinch of salt. Bring to a boil over medium-high heat, then reduce to a simmer. Cook for 10-15 minutes, or until the potatoes are tender when pierced with a fork. Drain and set aside to cool.
  2. Cook the Eggs: While the potatoes are cooking, place the eggs in a small saucepan and cover with water. Bring to a boil, then remove from heat, cover, and let sit for 10 minutes. Drain and transfer eggs to cold water to cool. Once cool, peel and chop the eggs.
  3. Prepare the Dressing: In a large bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until smooth and well combined.
  4. Combine Ingredients: Add the cooled potatoes, chopped eggs, celery, red onion, dill pickles (if using), and parsley (if using) to the dressing. Gently toss everything together until well coated.
  5. Chill and Serve: Cover the potato salad and refrigerate for at least 1 hour before serving to allow the flavors to meld together. Just before serving, sprinkle with paprika for a pop of color.
