Step 1
Preheat your oven to 190°C.

Heat the olive oil in a large skillet over medium heat. Add the diced onion and carrots, and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through.

Stir in the tomato paste and Worcestershire sauce, mixing well to combine.

Pour in the beef or vegetable broth, and season with salt and pepper to taste. Allow the mixture to simmer for 10-15 minutes, until the liquid has reduced slightly and the flavors have melded together.

Transfer the meat mixture to a baking dish, spreading it out evenly.

Spoon the mashed potatoes over the top of the meat mixture, spreading them out evenly to cover the entire surface.

Sprinkle cheddar cheese over the mashed potatoes.

Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the mashed potatoes are golden brown and the filling is bubbling around the edges.

Once done, remove the Cottage Pie from the oven and let it cool for a few minutes before serving.
