Ingredients:

  • 450g beef sirloin or steak, thinly sliced
  • 2 large onions, thinly sliced
  • 2 cups beef broth
  • 1 cup water
  • 1 tbsp Worcestershire sauce
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp flour
  • 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)
  • 8 oz (225g) egg noodles
  • 1 cup shredded Gruyère cheese (or Swiss cheese)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Caramelize the Onions:
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 15-20 minutes. Remove the onions from the skillet and set aside.
  1. Cook the Beef:
  • In the same skillet, add the remaining tablespoon of olive oil.
  • Add the thinly sliced beef, season with salt and pepper, and cook until browned on all sides. Remove the beef from the skillet and set aside.
  1. Make the Sauce:
  • In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
  • Sprinkle the flour over the garlic and stir well to combine.
  • Gradually add the beef broth, water, and Worcestershire sauce, stirring constantly to prevent lumps.
  • Add the thyme and bring the mixture to a simmer. Let it cook for 5 minutes until the sauce thickens slightly.
  1. Combine Ingredients:
  • Return the caramelized onions and cooked beef to the skillet.
  • Add the egg noodles and stir well to coat them with the sauce.
  • Cover and cook for 10-12 minutes, or until the noodles are tender, stirring occasionally.
  1. Finish and Serve:
  • Stir in the shredded Gruyère cheese until melted and well combined.
  • Adjust the seasoning with salt and pepper if needed.
  • Garnish with chopped fresh parsley before serving.
