Ingredients:

  • 1 cup fresh strawberries, hulled and chopped
  • 1/4 cup lemon juice
  • 3 tbsp honey or maple syrup
  • 2 tbsp gelatin powder
  • 1/4 cup water
  • 2-3 tbsp granulated sugar (for coating)
  • 1-2 tsp citric acid (for coating)

Instructions:

  1. Prepare the Strawberries:
  • In a blender, combine the chopped strawberries and lemon juice. Blend until smooth.
  1. Cook the Mixture:
  • Pour the strawberry puree into a small saucepan and heat over medium heat. Add honey or maple syrup and stir until well combined.
  1. Add Gelatin:
  • In a separate small bowl, mix the gelatin powder with water and let it sit for a minute to bloom. Once bloomed, add the gelatin mixture to the saucepan and stir continuously until the gelatin is completely dissolved.
  1. Mold the Gummies:
  • Remove the saucepan from heat and let it cool slightly. Pour the mixture into silicone gummy molds or a small baking dish lined with parchment paper. Smooth the surface if using a baking dish.
  1. Set the Gummies:
  • Refrigerate the molds or dish for 2-3 hours, or until the gummies are firm to the touch.
  1. Coat the Gummies:
  • Once set, remove the gummies from the molds or cut them into small squares if using a baking dish. In a small bowl, mix granulated sugar and citric acid. Roll each gummy in the mixture to coat evenly.
