  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large saucepan, bring the vegetable broth to a boil. Add the brown rice, reduce the heat to low, cover, and simmer for about 30-35 minutes or until the rice is tender and the liquid is absorbed.
  3. While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and sauté until softened, about 5 minutes. Add the garlic and cook for an additional 1 minute.
  4. Add the black beans, corn, diced tomatoes with green chilies, chili powder, cumin, paprika, oregano, salt, and pepper to the skillet. Stir to combine and cook for about 5 minutes to let the flavors meld together.
  5. Once the rice is cooked, combine it with the vegetable mixture in the skillet. Stir well to ensure everything is evenly mixed.
  6. Transfer the mixture to a greased 9×13 inch baking dish. Sprinkle the shredded cheddar cheese evenly over the top.
