Mielie pap, also known simply as pap, is a traditional South African dish made from maize meal, similar to polenta or grits. It’s a versatile dish that can be enjoyed as a breakfast porridge, a side dish with savory stews or meats, or even as a main course when flavored with spices and toppings. Mielie pap can vary in consistency from smooth and creamy to firm and solid, depending on personal preference and regional variations. It’s a beloved part of South African cuisine, often enjoyed at family gatherings, braais (barbecues), and celebrations. With its hearty texture and mild flavor, mielie pap is a comforting and satisfying dish that has been a staple in South African homes for generations.
Ingredients:
2 cups maize meal (mielie meal)
4 cups water
Salt to taste
Instructions:
1. In a large pot, bring the water to a boil over medium-high heat.
2. Gradually add the maize meal to the boiling water while stirring continuously to prevent lumps from forming.
3. Once all the maize meal has been added, reduce the heat to low and cover the pot with a lid.
4. Allow the mielie pap to simmer for about 30 minutes, stirring occasionally to prevent sticking.
5. After 30 minutes, remove the lid and stir the pap vigorously to break up any lumps and ensure it is smooth.
6. Add salt to taste and continue to cook for another 10-15 minutes, or until the pap reaches your desired consistency.
7. Serve hot as a side dish with your favorite stew, gravy, or relish.
Enjoy your mielie pap!
