Ingredients:
- 4 medium potatoes, peeled and thinly sliced

- 1 green bell pepper, diced
- 1 zucchini, diced
- 8 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheese (optional)

Instructions:
- Prepare the Ingredients:
- Peel and thinly slice the potatoes.
- Finely chop the onion.
- Dice the red and green bell peppers and zucchini.
- Cook the Potatoes:
- In a large non-stick skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the sliced potatoes to the skillet, season with salt and pepper, and cook until they are tender and lightly browned, about 10 minutes. Stir occasionally to prevent sticking.

- Season with salt and pepper to taste.
- Mix the Eggs:
- In a large bowl, whisk together the eggs and milk. Season with a pinch of salt and pepper.
- If using, stir in the shredded cheese.
- Combine and Cook:
- Reduce the heat to low and add the cooked potatoes back to the skillet with the sautéed vegetables.
- Pour the egg mixture evenly over the potatoes and vegetables.
- Cover the skillet and cook on low heat until the eggs are set and fully cooked, about 10-12 minutes.
- Serve:
- Carefully slide the potato omelet onto a serving plate.
- Garnish with freshly chopped parsley.
