Ingredients:

  • 4 medium potatoes, peeled and thinly sliced
  • 1 medium onion, finely chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 zucchini, diced
  • 8 large eggs
  • 1/4 cup milk
  • 1/2 cup shredded cheese (optional)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Ingredients:
  • Peel and thinly slice the potatoes.
  • Finely chop the onion.
  • Dice the red and green bell peppers and zucchini.
  1. Cook the Potatoes:
  • In a large non-stick skillet, heat 1 tablespoon of olive oil over medium heat.
  • Add the sliced potatoes to the skillet, season with salt and pepper, and cook until they are tender and lightly browned, about 10 minutes. Stir occasionally to prevent sticking.
  • Once cooked, remove the potatoes from the skillet and set aside.
  1. Sauté the Vegetables:
  • In the same skillet, add the remaining tablespoon of olive oil.
  • Add the chopped onion, red bell pepper, green bell pepper, and zucchini. Sauté until the vegetables are softened and slightly caramelized, about 5-7 minutes.
  • Season with salt and pepper to taste.
  1. Mix the Eggs:
  • In a large bowl, whisk together the eggs and milk. Season with a pinch of salt and pepper.
  • If using, stir in the shredded cheese.
  1. Combine and Cook:
  • Reduce the heat to low and add the cooked potatoes back to the skillet with the sautéed vegetables.
  • Pour the egg mixture evenly over the potatoes and vegetables.
  • Cover the skillet and cook on low heat until the eggs are set and fully cooked, about 10-12 minutes.
  1. Serve:
  • Carefully slide the potato omelet onto a serving plate.
  • Garnish with freshly chopped parsley.
  • Slice into wedges and serve hot.
