- Prepare Sweet Stiff Starter: Combine starter, flour, water, and sugar. Allow it to triple in size, which takes about 7-8 hours at 27-28°C.
- Dough Preparation: Mix bread flour, sugar, salt, egg, milk, and the sweet stiff starter until the dough comes together and is strong. Gradually add butter in 2-3 batches, kneading until fully incorporated and the dough achieves a windowpane effect.
- Bulk Proof: Let the dough bulk proof for 2 hours at 28°C.
- Shaping: Punch down the dough and divide it into 10 equal portions. Round them up and let them rest for 15 minutes. Roll out each portion and wrap around sausages.
- Final Proof: Sprinkle water on the rolls and coat with Parmesan cheese. Let them proof for another 3.5 hours at 28°C.
- Baking: Bake at 180°C for 15 minutes.
