These Sausage Squid Rolls are a delightful treat that never fails to cheer up the kids. Perfect for fun bakes over a long weekend, these rolls are a unique twist on the classic sausage roll, combining the savory taste of sausage with the unique texture of squid.

Ingredients:

Sweet Stiff Starter:

  • 25g starter
  • 80g flour
  • 35g water
  • 15g sugar

Dough:

  • 220g bread flour
  • 20g sugar
  • 4g salt
  • 1 egg
  • 105g milk
  • 20g butter
  • All of the sweet stiff starter

Instructions

  1. Prepare Sweet Stiff Starter: Combine starter, flour, water, and sugar. Allow it to triple in size, which takes about 7-8 hours at 27-28°C.
  2. Dough Preparation: Mix bread flour, sugar, salt, egg, milk, and the sweet stiff starter until the dough comes together and is strong. Gradually add butter in 2-3 batches, kneading until fully incorporated and the dough achieves a windowpane effect.
  3. Bulk Proof: Let the dough bulk proof for 2 hours at 28°C.
  4. Shaping: Punch down the dough and divide it into 10 equal portions. Round them up and let them rest for 15 minutes. Roll out each portion and wrap around sausages.
  5. Final Proof: Sprinkle water on the rolls and coat with Parmesan cheese. Let them proof for another 3.5 hours at 28°C.
  6. Baking: Bake at 180°C for 15 minutes.
