Taco Pasta Salad is a delightful fusion of classic taco flavors and hearty pasta. This dish combines seasoned ground beef, rotini pasta, fresh vegetables, and a zesty dressing, making it perfect for a refreshing lunch or a side dish at your next gathering. Ingredients:

  • 500g ground beef, cooked and drained
  • 500g rotini pasta, cooked and cooled
  • 1 oz taco seasoning
  • 1 small yellow onion, diced
  • 1 pint grape tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup black olives, sliced
  • 1 cup sour cream
  • 1 cup salsa
  • 1/2 cup chopped fresh cilantro
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions:

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat and stir in the taco seasoning. Set aside to cool.
  2. Cook the rotini pasta according to package instructions. Drain and rinse with cold water to cool. Set aside.
  3. In a large mixing bowl, combine the cooled ground beef, rotini pasta, diced yellow onion, halved grape tomatoes, shredded cheddar cheese, black beans, corn kernels, and sliced black olives.
  4. In a separate bowl, mix together the sour cream, salsa, lime juice, and chopped cilantro. Season with salt and pepper to taste.
  5. Pour the dressing over the pasta mixture and toss until everything is well combined.
  6. Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
  7. Serve chilled and enjoy!
