This dish combines seasoned ground beef, rotini pasta, fresh vegetables, and a zesty dressing, making it perfect for a refreshing lunch or a side dish at your next gathering. Ingredients:
- 500g ground beef, cooked and drained
- 500g rotini pasta, cooked and cooled
- 1 oz taco seasoning
- 1 small yellow onion, diced
- 1 pint grape tomatoes, halved
- 1 cup shredded cheddar cheese
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1/2 cup black olives, sliced
- 1 cup sour cream
- 1 cup salsa
- 1/2 cup chopped fresh cilantro
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat and stir in the taco seasoning. Set aside to cool.
- Cook the rotini pasta according to package instructions. Drain and rinse with cold water to cool. Set aside.
- In a large mixing bowl, combine the cooled ground beef, rotini pasta, diced yellow onion, halved grape tomatoes, shredded cheddar cheese, black beans, corn kernels, and sliced black olives.
- In a separate bowl, mix together the sour cream, salsa, lime juice, and chopped cilantro. Season with salt and pepper to taste.
- Pour the dressing over the pasta mixture and toss until everything is well combined.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld together.
