This Vegetarian Lentil Curry is a comforting, protein-packed dish that’s rich in flavor and spices. It’s made with tender lentils simmered in a fragrant tomato-based sauce infused with aromatic spices like cumin, turmeric, and garam masala. This wholesome curry is vegan-friendly, gluten-free, and perfect for a nutritious family dinner.

Ingredients:

  • 1 cup dried lentils (green or brown), rinsed
  • 1 tablespoon olive oil or coconut oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 can (400g) diced tomatoes
  • 1 can (400ml) coconut milk
  • 2 cups vegetable broth
  • Salt and pepper to taste
  • 1 cup fresh spinach (optional)
  • Fresh cilantro, for garnish
  • Cooked rice or naan, for serving

Instructions:

  1. Heat the oil in a large pot over medium heat. Add the cumin seeds and sauté until they start to pop.
  2. Add the chopped onion and sauté until golden brown, about 5-7 minutes.
  3. Stir in the garlic, ginger, turmeric, garam masala, ground coriander, and paprika. Cook for 1-2 minutes until fragrant.
  4. Add the diced tomatoes and cook for another 3-4 minutes, allowing the flavors to blend.
  5. Stir in the rinsed lentils, coconut milk, and vegetable broth. Bring to a boil, then reduce the heat to low and simmer for 30-35 minutes until the lentils are tender.
  6. If using spinach, stir it in during the last 5 minutes of cooking until wilted.
  7. Season the curry with salt and pepper to taste. Adjust the spices if needed.
  8. Serve the lentil curry over cooked rice or with naan bread. Garnish with fresh cilantro.
