It’s made with tender lentils simmered in a fragrant tomato-based sauce infused with aromatic spices like cumin, turmeric, and garam masala. Ingredients:
- 1 cup dried lentils (green or brown), rinsed
- 1 tablespoon olive oil or coconut oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 can (400g) diced tomatoes
- 1 can (400ml) coconut milk
- 2 cups vegetable broth
- Salt and pepper to taste
- 1 cup fresh spinach (optional)
- Fresh cilantro, for garnish
- Cooked rice or naan, for serving
Instructions:
- Heat the oil in a large pot over medium heat. Add the cumin seeds and sauté until they start to pop.
- Add the chopped onion and sauté until golden brown, about 5-7 minutes.
- Stir in the garlic, ginger, turmeric, garam masala, ground coriander, and paprika. Cook for 1-2 minutes until fragrant.
- Add the diced tomatoes and cook for another 3-4 minutes, allowing the flavors to blend.
- Stir in the rinsed lentils, coconut milk, and vegetable broth. Bring to a boil, then reduce the heat to low and simmer for 30-35 minutes until the lentils are tender.
- If using spinach, stir it in during the last 5 minutes of cooking until wilted.
- Season the curry with salt and pepper to taste. Adjust the spices if needed.
- Serve the lentil curry over cooked rice or with naan bread. Garnish with fresh cilantro.
